So we modernise in place. First we understand what the system really does and freeze that behaviour, then we improve it in small, reviewable steps while it keeps running the business. The old system carries on serving customers throughout; nothing depends on a single, nerve-wracking switch-over.
This is the opposite of a stop-the-world rewrite. Each step is tested, reversible and worth doing on its own, and we replace only the parts that genuinely need it — leaving the parts that work perfectly well exactly where they are.
